Quick Recipe: Taco-Style Shredded Chicken

One of the recipes I’m proudest for creating from scratch, by myself, is for a taco-style shredded chicken. Lots of people have requested we put it up on the blog, and here it is finally. It’s got the littlest, tiniest bit of kick to it, but even people who don’t like spicy foods will have no problems eating. Taste-wise, it’s got a dark, spiceful flavor that’s kind of similar to buffalo sauce, but different enough. You can place it in tacos, burritos, salads, sandwiches, or just eat it plain! It’s that good. You can make a large batch of it pretty easily, and take from it over the span of a week or two, so it’s ultra handy.

As a heads up, you’re best bet would be to buy a rotisserie chicken from the supermarket, and shred that, as I mentioned in my post about pulled/shredded meats. It’s fast, simple, and best of all cheap!

Smoothie Sunday: Pineapple Carrot Smoothie

While I was looking up carrot cake recipes to get ideas for my carrot cake smoothie I stumbled upon a few that contained pineapple. I was intrigued by this combination and figured it would work well for a smoothie too. While it is another carrot smoothie that was semi-inspired by carrot cake, it tastes different enough from the carrot cake smoothie thanks to the pineapple. The pineapple really adds a lovely citrus tang. Drink this smoothie and you won’t have to worry about getting scurvy and you’ll be able to see in the dark better.

Quick Recipe: Wildberry Pancakes

One of the absolute best parts about Summer? Besides the warm weather, longer days, lack of snow, cool thunderstorms, and vacation for some people, there is the oft-overlooked factor of fresh produce, specifically berries. Whether you have your own berry bushes in your yard or you’re able to hit up a local farm which sells their own, nothing beats nice freshly picked berries (especially blueberries)! You can use them pretty much in anything, but a longtime favorite is in baked goods and breakfast foods. I mean, sure you can just eat them on their own, by why do that when you can put those suckas inside of a pancake? It looks and tastes super deluxe, and it will definitely be something you miss, come Winter.

Smoothie Sunday: Beet Smoothie

As mentioned in a previous post, I’m trying to work more veggies into my smoothies this year.  I decided to give beets a try, since, while they do have a certain earthiness about them, they also have a sweetness.  The main hassle with this smoothie is that you’ll need to roast your beets the night before since they can take a long time to fully cook.  Alternately you could use canned beets, but still without cooking them first you risk them retaining a bit of can flavor.  While this smoothie may not be the sweetest, between the beet and nuts it may be one of the healthiest.  And certainly one of the prettiest in color.

Quick Recipe: Maple Glazed Pulled Chicken

Back last year we featured a delicious Fall-themed pizza which had an awesome mini-recipe inside of it. On the pizza we added some pulled chicken, cooked in an awesome combination of maple syrup and soy sauce. It was sweet, sticky, dark, complex, and other adjectives which could describe your sex-life. Most importantly of all though, it was delicious. For today’s quick recipe, we’re featuring the full details for it. Put it on sandwiches or just eat it on its own, it doesn’t matter, just put it in your body somehow.
