Cheese Review: Wildspitz
Cheese is probably up there as one of my favorite foods. Fancy cheeses can be expensive, but every now and then Erik and I like to treat ourselves to a new cheese. This time we decided on Wildspitz.

Wildspitz originates near the Swiss Alps and is made up of a mix of cow and goat milk. The most notable feature of this cheese is its smell. Yes, it is a smelly cheese. What makes it kind of nice though is that you can actually kind of control the levels of funk. If you want to really experience all this cheese has to offer, let it sit out at room temperature for a bit before eating and let it get nice and stinky. However if you’re not as much into the funk, you can eat it cold straight from the fridge and it has just a mild bit of smell, not too much more than say a provolone. If you do this you may not get the full depth of flavor but it could be a good way to ease into the funk.
Quick Recipe: Wildberry Pancakes
One of the absolute best parts about Summer? Besides the warm weather, longer days, lack of snow, cool thunderstorms, and vacation for some people, there is the oft-overlooked factor of fresh produce, specifically berries. Whether you have your own berry bushes in your yard or you’re able to hit up a local farm which sells their own, nothing beats nice freshly picked berries (especially blueberries)! You can use them pretty much in anything, but a longtime favorite is in baked goods and breakfast foods. I mean, sure you can just eat them on their own, by why do that when you can put those suckas inside of a pancake? It looks and tastes super deluxe, and it will definitely be something you miss, come Winter.
Food 101: How To Make Bibimbap, Donburi, Rice Bowls, Etc…
One of my big things I like to preach to people unexperienced in the cooking world is the importance of leftovers. Leftovers are the best utility at your disposal when it comes to making lunch, and can really help out at dinner too. I bring this up because of the versatility of everyone’s favorite starch: rice. Leftover rice is a brilliant tool that can form the basis for an entire lunch pretty easily. The easiest way to do this is through what’s known as a “rice bowl”. They’re delicious, easy, healthy, and can be made with pretty much anything lying around.
Quick Recipe: Clover Tea
Tea is pretty awesome cuz it’s so easy to make. Even better, the not-technically-tea version of tea, ’tisane’, can be made of pretty much anything. Notably, you can steep various common edible plants to make a quick, poor man’s tea in the blink of an eye, after some easy foraging in your yard. Obviously not all will taste good, so be discerning. A common one that actually works really well is clover tea! Look for the tall ones with the purple flowers, they have a sweeter, less grassy taste than the short ones with white flowers. That said, white flowers will still work, it’ll just taste a bit more like green tea than white tea.
Oh and the four-leaf clover isn’t necessary, though it will add a ton of luckiness to your hot leaf juice (probably).

Food 101: Basic Guacamole
In my experience guacamole seems to be one of those foods that most people either love or hate. Some people are happy with any guacamole, but others take it much more seriously. There was even a huge social media blow-out (Guacamole-gate) when it was suggested that a guacamole that included peas could be superior to others. Personally I’m more on the traditional side of guacamole things. A good basic guacamole is a culinary multi-tasker. You can set it out as a dip at a party, put it in a burrito, on a sandwich, or use it as a topping for quesadillas, chicken, etc.
Guacamole can range from super basic to super loaded. With this post I’m going to go over how to make a super basic guacamole and then add some suggestions to amp it up a bit if desired. There’s really only 3 ingredients you need for your most basic guacamole: avocado, lemon or lime juice, and salt. Once you have this base you can easily decide on other ingredients to add in to give your guacamole a different taste to fit the occasion. Or just eat it as is. Whatever suits your mood that day.
