Recipe Time: Grilled French Toast

Wait! Stop! Don’t drool directly onto your dumb iPad! Shit’s expensive, dude.

Summer may be on its way out, but there’s still plenty of time left for grilling before November hits (yes, that’s right word of God states November is officially the end of grilling season). We recently decided to toy around with something that’s a bit of a missing link in the culinary chain. Grilling is great, and throwing stuff on the grill that doesn’t normally get grilled results in awesome things. Hell that’s one of the reasons why grilled desserts ended up becoming a thing. Yet, despite all that has been done with grilling, breakfast has mysteriously remained outside of the barbecue loop… Sure, you may once in a while hear about people grilling bacon, but it’s usually on the side of lunch or dinner. We decided to jump headfirst into this mystery, and came up with something magical.

Quick Recipe: Peruvian Style Grilled Chicken

There’s this really good local chicken place where we live, aptly called “Chicken Place”. They serve some of the most delicious rotisserie chicken you can imagine. Interestingly enough they specialize in Peruvian cuisine, and I came to learn the reason the chicken tasted so good was because of the style of seasoning they used which takes some cues from other ethnic foods like Chinese and Italian and Indian. After a little bit of research I was able to pinpoint some recipes that captured this awesome flavor, and lo and behold I produced a “close enough” version you can make at home pretty easily. It’s nothing out of this world, but it is certainly just a really delicious, solid way of preparing your chicken when you’re in the mood to grill.

Cheat Codes: How To Make A Tostada Meal

People who are following PCFG may remember tostadas, from our post on how to make your own Crunchwrap from Taco Bell. They’re a lightly fried, crispy, corn tortilla that somewhat resemble a giant tortilla chip or a flat taco shell. They work really well for a number of different simple dishes or recipes.

But wait, actually, a tostada is also just the name of a meal in Mexican cuisine. Shit, this might be confusing. (Actually, it’s pretty simple. It’s made out of the aforementioned tostadas, and can  be prepared in minutes.)

Quick Recipe: Taco-Style Shredded Chicken

One of the recipes I’m proudest for creating from scratch, by myself, is for a taco-style shredded chicken. Lots of people have requested we put it up on the blog, and here it is finally. It’s got the littlest, tiniest bit of kick to it, but even people who don’t like spicy foods will have no problems eating. Taste-wise, it’s got a dark, spiceful flavor that’s kind of similar to buffalo sauce, but different enough. You can place it in tacos, burritos, salads, sandwiches, or just eat it plain! It’s that good. You can make a large batch of it pretty easily, and take from it over the span of a week or two, so it’s ultra handy.

As a heads up, you’re best bet would be to buy a rotisserie chicken from the supermarket, and shred that, as I mentioned in my post about pulled/shredded meats. It’s fast, simple, and best of all cheap!

We Can Do It Better: How To Make Homemade Chicken Fingers

If there is one universally loved menu item I’m willing to bet everyone enjoys, a food so beloved by people from different races, creeds, and backgrounds, one thing we can all agree is just sooooo frigging tasty from the time we’re capable of eating solid food, to the time we’re no longer capable of eating solid food…

Oh man…

It’s chicken fingers. Seriously, everybody likes chicken fingers. You can’t dislike them. They’re perfect. They’re crisp and tasty and moist, have just enough flavor yet go great with a variety of condiments… There’s no reason to not eat them, diet permitting. Okay, so maybe they’re not the healthiest food out there, but as we’ve already established, fried foods aren’t necessarily bad for you so long as you fry them correctly. That’s especially true when you make your own fried foods at home. So, well, why the hell not?
