Quick Recipe: Wildberry Pancakes
One of the absolute best parts about Summer? Besides the warm weather, longer days, lack of snow, cool thunderstorms, and vacation for some people, there is the oft-overlooked factor of fresh produce, specifically berries. Whether you have your own berry bushes in your yard or you’re able to hit up a local farm which sells their own, nothing beats nice freshly picked berries (especially blueberries)! You can use them pretty much in anything, but a longtime favorite is in baked goods and breakfast foods. I mean, sure you can just eat them on their own, by why do that when you can put those suckas inside of a pancake? It looks and tastes super deluxe, and it will definitely be something you miss, come Winter.
Smoothie Sunday: Beet Smoothie
As mentioned in a previous post, I’m trying to work more veggies into my smoothies this year. I decided to give beets a try, since, while they do have a certain earthiness about them, they also have a sweetness. The main hassle with this smoothie is that you’ll need to roast your beets the night before since they can take a long time to fully cook. Alternately you could use canned beets, but still without cooking them first you risk them retaining a bit of can flavor. While this smoothie may not be the sweetest, between the beet and nuts it may be one of the healthiest. And certainly one of the prettiest in color.
Smoothie Sunday: Berry Cherry Smoothie
This is another one of my, “I need to use up this fruit” smoothie creations (as opposed to a “thought out a few days in advance” one). Funnily enough, it seems like my last minute creations end up being some of my favorites. Then again it’s hard to go wrong with a fairly classic combination like this.
Smoothie Sunday: Kiwi Lime Smoothie
Lime is probably one of my favorite citrus flavors. It’s so refreshing and also smells wonderful. I’m very upset that green apple has become the go-to flavor for green candies and the like, pushing lime out of the way. I also enjoy lime in smoothies. They definitely need to be combined with another fruit though, because otherwise you’ll just end up with a limeade drink. This time I decided to try mixing lime with another green fruit – kiwi. While a good start, I will definitely be experimenting with other lime smoothies in the future as well.
Smoothie Sunday: Avocado Horchata Smoothie
My last attempt at a horchata smoothie was yummy, but a bit thin for my personal smoothie tastes. So I decided to try again. Remembering how thick the avocado smoothie I made last year turned out, I figured if I wanted a thicker smoothie that this would be a good bet. And I was right! This smoothie was much thicker and smoother. The fats in the avocado also made it more filling. Overall I preferred this horchata smoothie over the first, but they’re both good in their own ways.
