Pizza Lab #16: Pizza Pancakes
Pizza Lab is a fun theoretical column in which Meg A. and Erik S. explore their innermost passion for baking and eating pizzas. It exists purely for the sake of experimenting in the kitchen. It may not necessarily be cost-effective every time, so don’t try this at home kids.
Though the month of March contains a few important holidays (St. Patrick’s Day, the first day of spring, my birthday…), perhaps most important is National Pancake Day on March 4th. National Pancake Day was started by IHOP in 2006 as a way to raise money for charity by giving free short stacks of buttermilk pancakes. Now I know what you’re thinking: this is a pizza lab post, why am I talking about pancakes? It’s because in honor of National Pancake Day we decided to have March’s pizza lab be pancake pizza! We’d tossed the idea around before, and this seemed like the perfect occasion. It’s also a good tie-in to the Pancake Lab we have on our Facebook page.
We Can do it Better: Taco Bell Chicken Flatbread Sandwich
Erik has already admitted to being a recovering Taco Bell addict. The thing that makes this journey the hardest, and most temps relapse are their cheap chicken flatbreads. The one he specifically misses the most is the chipotle chicken flatbread. The chipotle chicken flatbread sandwiches were originally released in the summer of 2011 for a limited time, and have occasionally been re-released for limited runs since then. The sandwiches were made on square flatbreads with marinated grilled chicken, cheddar, pepper jack and mozzarella cheeses, and a chipotle sauce. A simple, but delicious concoction.
Luckily for Erik, and you dear reader, it’s absurdly easy to make your own Taco Bell chicken flatbread sandwiches at home.
Pro-tip: Storing Your Dry Goods
I’ve already filled you in on the importance of keeping things like flour and sugar stocked in your pantry, however to make sure you’re really getting your money’s worth, it’s important to store them properly. We recently found out the hard way what happens when you use flour that’s gone bad. The result was sad chocolate chip cookies. Don’t let sad chocolate chip cookies happen to you. Here’s what you can do to prevent that.
Adventures in Cheese Making: Ricotta and Ricotta Salata
If you’ve visited this blog before, you could probably tell that we enjoy cheese. We specially ordered Limburger from the internet just to try it (and later discovered we could actually buy it locally), we support a local dairy farm by occasionally buying cheese from them, and our first real date night after I finished classes last semester involved us going to a fancy cheese shop. We may be a tiny bit obsessed with cheese. But who isn’t? It’s wonderful. As part of our enjoyment of cheese I bought Erik a cheese making kit for Christmas. A few weeks ago we finally got to try it out.
